Agincourt is one of the more sheltered blocks at Yarra Yering, vines were established circa 1990 and yield the finest harvests of Malbec anywhere in the nation. Mostly Cabernet Sauvignon with a quarter of the gentle Malbec, grapes are all hand picked, crushed and destemmed into good old fashioned, half tonne open top fermenters, manually plunged twice daily and treated to extended time on skins for a softening of tannins. Batches are delicately basket pressed into seasoned French oak barriques for malolactic and twenty months maturation.

A Cabernet Sauvignon with elegance, concentration and finesse. Yarra Ridge has made the most of the best fruit which the Yarra Valley can produce, treating the wine to the most exacting standards of vinification, followed by a lengthy maturation under the finest selection of oaks.

One of Victoria's quiet achiever wineries, the team at Witchmount have been rewarded for their efforts by a succession of spectacular vintage releases. The growing seasons here enjoy extended Autumn ripening, so essential to bringing out the intensely fragrant fruit characters and refined tannins of world class Cabernet Sauvignon. Treated to an extended term of maturation in seasoned French and American oak, Lowen Park articulates the piquant eucalypt aromatics and spiced bush lemon complexity of a unique Victorian vineyard.

The propitious Witchmount vines are not far from from the relative comfort of Melbourne city but the surrounding Sunbury mesoclimes are very cool climate indeed. These are parts that are highly opportune for yields of Cabernet Sauvignon, characterised by intensely flavoured little berries lined with refined, elegant tannins. The closest husbandry and an uncompromising standard of viticulture, mean that Witchmount can produce one of Victoria's stateliest Cabernet wines, crafted to a style that's so evocative of her siblings from Bordeaux.

Over the years Windy Peak have consistently out performed many pricier labels through sheer quality and value, by virtue of cutting edge viticulture and flair in the art of vinification. Having assembled parcels of the finest Yarra Valley fruit around a backbone of Tarra Warra Merlot and Dixon's Creek Cabernet, the De Bortoli winemaking team have come up with another winner. A plummy red wine with velvetine tannins and clean, polished finish, very easy to sip and savour as aperitif, innately suited to warming comfort food.

The parched, sun exposed vines at Water Wheel are only a slight distance from the shade of giant river gums, which grow along the banks of Loddon River. Ancient eucalypts infuse the grapes with a treasure trove of complex, elegant flavours. A salient Bendigo Cabernet that's warming and generous with intense flavours and long, drying tannins, ideally suited to meat braises and grills, steak and kidney pie or venison bangers.

Excellent Langtons Classification. Whilst the cepage of fruit to Amelia may be different each year, a backbone of two thirds Cabernet Sauvignon dominates, a third of Merlot and Cabernet Franc ensues, followed by a soupçon Petit Verdot. Favouring the slow ripening of a long growing season, Petit Verdot grapes are always last to be harvested, usually in mid April. It is the the quietly spoken measure of of Petit Verdot which contributes structure, fine firm tannins and good natural acidity, fully approachable while young, she will age beautifully for more than fifteen years.

Established 1968 by the legendary Melbourne restaurateur Tom Lazar, Virgin Hills is the gem of the Macedon Ranges, one of Australia's iconic vineyards. He planted Cabernet Sauvignon and Shiraz, Malbec, Merlot and Pinot Noir, with a view to creating an Australian first growth to rival the great Bordeaux he had grown to love while working as a sculptor in Paris. Only one wine is bottled under the Virgin Hills label each year. From inaugural release, the cepage of varietals has varied subtly each vintage, adding to the mystique and complexity of Virgin Hills.

The first Train Trak vines were planted in the 1990s and nurtured thereafter by the superior viticultural practices of John Evans. The vineyard's name relates to a train track which runs through the property over a quaint trestle bridge. Built in the 1800s, it was an important link to the Yarra Valley and is still a significant landmark traversing the local vineyards and pasture. The arid temperate climes and ancient craggy terrains, which make Pyrenees mesoclimes so very unique, make a home away from home for the noble varietal grapes of Bordeaux. The topical cepage of Cabernet, Merlot and Petit Verdot, coalesce into a rakish Medoc style, bursting with blue black flavours and lined with opulent tannins. Tahbilk have the magic touch with old vines, custodians of a priceless prephylloxera block established in 1860 and productive to this day. Established circa 1860, amongst the scenic Nagambie Lakes, Tahbilk is one of Australia's most historic wineries, with a long and proud history of producing Victoria's most reliable Cabernet Sauvignon. Following his return from service after World War II, Eric Purbrick discovered a cache of wine hidden in 1876 under the Tahbilk cellars. Though pale in colour, it was sound and drinkable after 71 years. The promise of long lived red wine inspired Purbrick to establish new plantings in 1949, today they are some of Victoria's oldest productive Cabernet vines.

Crafted from the best of vintage Cabernet Sauvignon, the choicest parcels collated from across the wonderful endowment of Tahbilk vineyards. When the national wine press discovered the quality of wine from this boutique Pyrenees estate, the secret was out, the phones rang hot and the Summerfield cellars were emptied in two days. Summerfield's editions are all hand made in small batches to ensure consistency and quality within each bottle. Opulent with blackberry, blackcurrant, raspberry and intense florals throughout, profoundly structured and elegantly framed by the most genteel oaken tannins.

A cool climate Cabernet wine of impeccable integration and exceptional balance. Sourced from the Trevor's Cabernet Block on Fowles Plunkett Whitegate Vineyard in Strathbogie Ranges, where harvesting generally occurs from late February through to early May. The sandy loam soils on the elevated and undulating, gently inclined site stimulate the vines into yielding the most intensely flavoured Cabernet berries with pungent aromatics and toothsome tannins. A very well balanced, full bodied Cabernet Sauvignon with a long flavourful finish.

Hubert de Castella's passion for Yarra Valley saw him establish St Huberts in 1862. By the late 1800s it had grown to be the largest winemaking estate, the wines enjoyed immediate success in markets local and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that Yarra Valley again rose to prominence as a wine producing region and St Huberts was once again, one of the leading protagonists.

A boutique, hands on winemaking enterprise of extremely limited production. Sedona take aim each vintage to construct a bold varietal style of Cabernet Sauvignon, showing vibrant characters of blackberry and cassis, with a power and weight of fruit that has become a Victorian benchmark. Ever since the establishment of Scotchman's Hill to the balmy maritime aspects of Bellarine Peninsula, the award winning team have been on the lookout for harvests collated from climes further afield which are worthy of the estate label. In this case, the pick of Cabernet and Shiraz grown to choice vineyards, has been assembled into a solidly structured accord, exhibiting prominent spiced plum and berry flavours supported by firm stalky tannins, all fashioned into the enduring Scotchman's Hill style.

Named after winemaker Neill Robb's wife, Sally's Paddock is handcrafted from a single unirrigated vineyard, entirely estate grown, vinified and bottled, universally regarded as one of Australia's first growths. The unique combination of soil, cool to mild climatic and traditionally managed vines produce low yield grapes of high intensity, colour and flavour, achieving the most compelling wines in the classic Pyrenees style. Langtons listed ever since the catalogue's inception, Sally's Paddock is a long lived and enduring national icon wine.

Planted to a property named Wildfell in 1851 by the original proprietor, Redbox estate's vines are gingerly husbanded to yield the most essential examples of Yarra Valley Cabernet Sauvignon. Redbox make the most of an affinity between this slow ripening noble varietal and the condusive climes of Yarra Valley. Re established in 1986, the innovative approach to viticulture and highly skilled efforts of the team translate into a wine of luscious berry fruit characters, supportive oak and mouthfilling tannins, in a graceful contemporary styling.

Colin Preece is one of Victoria's great trail blazing winemakers, for decades the chief at Seppelt Great Western. A backbone of Mitchelton fruit provides the foundation of rich flavours to one of Australia's most dependable Cabernet wines. Oak maturation has softened the tannins, imparting chocolate, vanilla and spice flavours.

Paul Osicka had the vision to establish vines in the parched sandy soils of Heathcote's easterm precincts during the 1950s. Eponymously labelled after the proprietor winemaker, Graeme's Blend has consistently delivered a cornucopia of breathtaking Bendigo fruit every year since inaugural vintage 1980. The unirrigated Passing Clouds property produces meagre yields these days and grapes are called upon from outstanding vineyards between Bendigo and Heathcote. Parcels of Cabernet and Shiraz grown to eminent Bendigo sites are assembled around the backbone of estate grown fruit to create a complex, more powerful wine.

A rich assemblage of Cabernet Sauvignon, Merlot and Cabernet Frank from Yin Barun Vineyard, Merlot from the Gralaine property near Geelong and Petit Verdot from Colbinabbin Estate at Heathcote. Hanging Rock Wines know about the noble French varietals, the estate patriarch has received French Australian Chamber of Commerce Flair Award for fostering French Australian relations. The misty dawns and extended growing seasons of Gippsland East are an ideal mesoclime for Cabernet Sauvignon, the long ripening and sanguine soils afford grapes the opportunity to develop rich fruit esters, while waxing a coat of fine, rich tannins. The percentage of each varietal included into Quintet every year is determined largely by the vagaries of vintage, factors such as fruit set and quality of harvest. An extravagantly rich cepage of Cabernet and Merlot, Malbec, Verdot and Cabernet Franc, Quintet exhibits an uncanny balance which drinks beautifully, a slight alcohol lift on finish will see it through for many years to come.

Cabernet Sauvignon are among the earliest planting at Mitchelton, they have thrived under the balmy climes and yield an outstanding harvest with each vintage. A compilation of fruit from some of the oldest blocks have been treated to a traditional vinification and term of age in the pick of luxury oak barriques. Elegantly structured, intense savoury aromas are complemented by sweet leather and musk, the palate is all about concentrated black and red fruits layered over tasty tar and savoury black olives, fine, chewy tannins draw the palate out to exquisite length.
